Memory and Inspiration
We found it in a historic grocery store in Naples, on a Friday morning: ginger, cinnamon, and cloves on the counter, coriander in the air, the man behind the counter weighing spices as his family has done for three generations. The Monsù was the French chef that Neapolitan nobles would import to add a touch of class: it always ended with Naples changing him. Tobacco, sweet woods, tonka bean: the scent of those who win by character. Not by title.
